  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 flax egg (1 tablespoon ground flaxseed + 3 tablespoons water)
  • 1 1/2 cups all-purpose flour
  • 1 large honeycrisp apple
  • Pumpkin pie spice

Instructions

  1. Prepare the flax egg by mixing ground flaxseed with water and letting it sit for about 5 minutes.
  2. In a saucepan over medium heat, combine water, cornstarch, apple chunks, brown sugar, vegan butter, lemon juice, and pumpkin pie spice to create the apple filling; cook until thickened.
  3. In a mixing bowl, cream together vegan butter and sugars. Add the flax egg and combine well.
  4. Gradually mix in flour, remaining pumpkin pie spice, baking powder, and salt until fully incorporated.
  5. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  6. Scoop dough, fill with apple mixture, shape into balls, roll in sugar, and place on baking sheet.
  7. Bake for 15-20 minutes until lightly golden.
