  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter (melted)
  • ¾ cup sour cream
  • 1½ cups diced fresh strawberries
  • 3 Tbsp lemon juice
  • 2 Tbsp lemon zest
  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F and prepare a 9”x5” loaf pan with nonstick baking spray.
  2. In a large bowl, mix the dry ingredients: flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the wet ingredients: melted butter, sour cream, milk, eggs, lemon juice, lemon zest, and vanilla extract.
  4. Combine the wet and dry mixtures gently until just combined; do not overmix.
  5. Fold in the diced strawberries carefully.
  6. Pour the batter into the prepared loaf pan and bake for 65-70 minutes or until a toothpick comes out clean.
  7. Allow to cool on a wire rack before serving.
