  • 2 teaspoons vanilla extract
  • 1 tablespoon maple syrup
  • ¼ cup pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • 1 ½ teaspoons ground cinnamon
  • 2 cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon kosher salt
  • ½ cup white sugar (for coating)
  • ½ tablespoon pumpkin pie spice (for coating)

Instructions

  1. Begin by browning the butter in a saucepan over medium heat until it has a nutty aroma. Allow it to cool.
  2. In a mixing bowl, whisk together the cooled brown butter, sugars, maple syrup, egg yolk, vanilla extract, and pumpkin puree until smooth.
  3. In another bowl, mix together the flour, baking powder, baking soda, salt, pumpkin pie spice, and ground cinnamon.
  4. Gradually fold the dry ingredients into the wet mixture until combined. Chill the dough for at least 30 minutes in the refrigerator.
  5. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  6. Scoop out dough balls and roll them in a mixture of sugar and pumpkin pie spice before placing them on the prepared sheets.
  7. Bake for 10–14 minutes until edges are set but centers remain slightly underbaked.
