  • 12 button or cremini mushrooms
  • 7 slices of bacon
  • 1/4 cup diced onion
  • 8 oz cream cheese (room temperature)
  • 1/21 cup shredded sharp cheddar cheese
  • Black pepper (to taste)
  • 1/2 tsp garlic powder
  • 23 tbsp butter or reserved bacon drippings
  • 1/2 cup breadcrumbs (seasoned or plain)

Instructions

  1. Preheat oven to 350°F. Clean mushrooms and remove stems; chop stems finely.
  2. Cook 3 bacon slices until limp and the remaining 4 slices until crispy; set aside on paper towels, reserving drippings.
  3. Sauté chopped onion and mushroom stems in reserved drippings until soft.
  4. In a mixing bowl, combine cream cheese, chopped crispy bacon, cheddar cheese, sautéed mixture, black pepper, and garlic powder; mix well.
  5. Fill each mushroom cap with the cheese mixture without overflowing.
  6. Top each mushroom with a piece of limp bacon and breadcrumbs; drizzle with melted butter or drippings.
  7. Bake for about 20 minutes until golden brown on top.
