  • 1/2 cup unsalted butter (room temperature)
  • 2/3 cup light brown sugar (packed)
  • 1 tablespoon ground cinnamon
  • 2 teaspoons cocoa powder
  • 1 teaspoon vanilla bean paste
  • 1/2 cup unsalted butter (room temperature)
  • 4 ounces cream cheese
  • 1 cup powdered sugar
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla bean paste or extract

Instructions

  1. Prepare tangzhong by whisking water and flour together in a saucepan over medium heat until it reaches a paste-like consistency.
  2. In a separate bowl, combine milk, cream, and vinegar.
  3. Mix dry ingredients (bread flour, sugar, cocoa powder, yeast, salt) in a stand mixer. Add the milk mixture, egg, vanilla, tangzhong, and red food coloring; knead on low speed until shaggy.
  4. Gradually incorporate softened butter while kneading until smooth and elastic.
  5. Allow dough to rest covered for 30 minutes.
  6. For the filling, mix together butter, brown sugar, cinnamon, cocoa powder, and vanilla until smooth.
  7. Roll out dough into a rectangle, spread filling evenly, cut into strips, roll up each strip carefully into rolls.
  8. Transfer to a baking pan lined with parchment paper and let rise until doubled in size (1–2 hours).
  9. Bake at 325°F for 28–35 minutes or until golden brown.
  10. Prepare cream cheese frosting by mixing softened cream cheese and butter; gradually add powdered sugar and cream while mixing until fluffy.
  11. Cool rolls slightly before frosting.
