  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup chopped walnuts
  • 1 cup grated zucchini
  • 2 cups grated carrots
  • 1/2 cup unsweetened applesauce
  • 1/2 cup maple syrup
  • 3 large eggs
  • 1/2 cup avocado oil
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F and line muffin tins with paper liners.
  2. In a large bowl, whisk together sugar, flour, cinnamon, baking soda, salt, coconut, and walnuts. Stir in grated zucchini and carrots.
  3. In a separate bowl, combine applesauce, maple syrup, eggs, avocado oil, and vanilla extract. Pour into the dry mixture's well.
  4. Gently mix until just combined; avoid overmixing.
  5. Fill muffin tins two-thirds full with batter.
  6. Bake for 25–35 minutes or until a toothpick inserted comes out clean.
  7. Allow muffins to cool in pans for 7 minutes before transferring to a cooling rack.
