  • 3/4 cup salted butter (room temperature)
  • 3 large eggs (room temperature)
  • 3 tbsp lemon juice
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 cup whole milk (room temperature)
  • 1 1/2 cups powdered sugar (sifted)
  • Lavender extract and optional purple food coloring

Instructions

  1. Preheat the oven to 350°F (180°C) and prepare a 9×5-inch loaf pan with parchment paper.
  2. Whisk together flour and baking powder in a medium bowl; set aside.
  3. In a large bowl, mix sugar, lemon zest, and lavender until fragrant. Add softened butter and cream until fluffy.
  4. Incorporate eggs one at a time, then mix in lemon juice.
  5. Gradually add half of the flour mixture followed by whole milk; mix until combined.
  6. Pour batter into the loaf pan and bake for 50-60 minutes or until golden brown and a skewer inserted comes out clean.
  7. Cool in the pan for 15 minutes before transferring to a wire rack.
  8. For the glaze, mix powdered sugar with milk and lavender extract until smooth; drizzle over cooled cake.
