  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 2 cups Japanese short-grain rice
  • ¼ cup tonkatsu sauce
  • 2 ½ cups water
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • 1 cup shredded cabbage
  • 2 green onions, sliced
  • Sesame seeds, for garnish
  • Pickled ginger (optional)

Instructions

  1. Rinse and soak the rice for 30 minutes, then cook it according to package instructions.
  2. Pound the chicken to an even thickness and season with salt and pepper.
  3. Set up a breading station with flour, beaten eggs, and panko breadcrumbs.
