  • 2 and 1/4 teaspoons instant or active dry yeast
  • 3 tablespoons granulated sugar
  • 3 tablespoons unsalted butter (softened)
  • 3 cups all-purpose flour (plus more as needed)
  • 1 and 1/4 teaspoons salt
  • 1 cup salted butter (226g, slightly softened)
  • 3/4 cup granulated sugar (150g)
  • 1 tablespoon ground cinnamon
  • Optional fillings: Nutella, jam, lemon curd

Instructions

  1. Whisk warm milk, yeast, and sugar in a bowl; let it foam for about 5 minutes.
  2. Mix in butter, flour, and salt until combined.
  3. Gradually add remaining flour until a soft dough forms.
  4. Knead for about 5 minutes until slightly tacky; perform windowpane test.
  5. Place dough in greased bowl; cover and let rise for about 2 hours until doubled.
  6. Chill the dough for 20 minutes after flattening into a rectangle.
  7. Prepare butter mixture by beating softened butter with flour.
  8. Laminate dough by folding it over the butter three times; chill between folds.
  9. Cut into strips, roll up, place in muffin tins, and let rise before baking at 350°F until golden brown.
