  • 1 cup dry Israeli couscous
  • 1/2 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1 tbsp honey
  • 4 garlic cloves, minced
  • 1 1/2 tsp dijon mustard
  • 1 tsp dried oregano
  • 1 3/4 tsp kosher salt
  • Freshly ground black pepper
  • 1 mini cucumber, chopped
  • 4 scallions, chopped
  • 1/4 cup fresh dill, finely chopped
  • 1/4 cup fresh parsley, finely chopped
  • 1/4 cup crumbled feta (or non-dairy alternative)

Instructions

  1. Marinate the skirt steak by whisking together olive oil, lemon juice, honey, garlic, mustard, oregano, salt, and pepper. Coat the steak and let it marinate for 30-45 minutes.
  2. Cook the couscous according to package instructions. Rinse under cold water and mix with remaining marinade, cucumber, scallions, dill, parsley, and feta.
  3. Preheat the grill to medium-high heat (450°-500°F). Grill the steak for 3-4 minutes per side until desired doneness. Let it rest for 10 minutes before slicing.
