  • 2 ½ cups cake flour
  • ¾ cup sweetened shredded coconut
  • ¾ cup toasted pecans (chopped)
  • 3 large egg yolks
  • ¾ cup evaporated milk
  • 6 Tablespoons unsalted butter (cut into 6 pieces)
  • ¼ cup granulated sugar
  • ¼ teaspoon table salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. For the Coconut Pecan Topping: In a saucepan, mix egg yolks, evaporated milk, butter, sugars, salt, and vanilla over medium heat until thickened. Stir in coconut and pecans; cool.
  3. For the Cookie Dough: Cream together softened butter and sugars until fluffy. Add cocoa powder, eggs, and vanilla; mix well. Combine dry ingredients and gradually add to wet mixture until just combined.
  4. Drop tablespoon-sized portions of dough onto parchment-lined baking sheets. Top each with the coconut pecan mixture.
