  • 8 ounces dry protein pasta
  • 2 cans (5 ounces each) albacore tuna in water
  • 1 can (15.5 ounces) white kidney beans, drained
  • 4 large hard-boiled eggs
  • 2 scallions, thinly sliced
  • 1 cup frozen peas
  • 1 cup whole milk cottage cheese
  • 1/2 cup mayonnaise
  • Red wine vinegar
  • Dijon mustard
  • Dried dill
  • Garlic powder
  • Onion powder
  • Black pepper
  • Salt to taste

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and rinse with cold water.
  2. While pasta cooks, drain tuna and beans; chop hard-boiled eggs and slice scallions.
  3. In a mixing bowl, whisk together cottage cheese, mayonnaise, vinegar, mustard, dill, garlic powder, onion powder, black pepper, and salt.
  4. In a large bowl, combine cooled pasta with tuna, beans, eggs, scallions, and peas. Add dressing and mix well.
  5. Chill for at least 30 minutes before serving.
