  • 2 tbsp vegetable oil
  • 3 cloves garlic (minced)
  • 1/4 cup diced onion
  • 1 large carrot (34 oz)
  • 2 tbsp tomato paste
  • 1 1/4 cups lentils (green or a mix)
  • 12 oz potatoes (cut into bite-sized pieces)
  • Seasonings: salt, black pepper, thyme, oregano
  • 45 cups water

Instructions

  1. Heat oil in a large pot over medium heat. Sauté the diced onion for one minute until fragrant. Add garlic and carrots; cook for an additional 2-3 minutes.
  2. Stir in tomato paste and optional tomato sauce; cook for another minute. Add lentils and potatoes to the pot.
  3. Pour in 4 cups of water and season with salt, pepper, thyme, and oregano. Bring to a boil.
  4. Reduce heat to medium-low and cover. Simmer for 25-35 minutes until lentils are tender and potatoes are cooked through.
  5. Adjust seasoning as needed before serving warm.
