  • Salt & pepper (to taste)
  • 1/2 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 3 tablespoons butter (divided)
  • 2 tablespoons flour
  • 1 1/4 cups chicken broth
  • 1/4 teaspoon Italian seasoning
  • 1/4 teaspoon onion powder
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Slice chicken breasts in half lengthwise to create cutlets and season with salt, pepper, and garlic powder.
  2. In a skillet over medium-high heat, heat olive oil and 1 tablespoon of butter. Cook chicken for about 4-5 minutes per side until golden brown; transfer to a plate.
  3. Lower heat and add the remaining butter to the skillet. Once melted, stir in flour and cook for one minute while stirring.
  4. Gradually whisk in chicken broth until smooth; stir in Italian seasoning and onion powder.
  5. Return the chicken to the skillet and cook for an additional 4-5 minutes until heated through and gravy thickens.
