  • 2 cloves garlic (minced)
  • 2 cups chicken or vegetable broth
  • 1 (14 ounce) can fire-roasted diced tomatoes (with juices)
  • 3 (14 ounce) cans black beans (drained & rinsed)
  • 1 (4 ounce) can diced green chilies (with juices)
  • 1/2 red bell pepper (chopped)
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1 tablespoon lime juice
  • Salt & pepper (to taste)
  • Toppings (optional): chopped cilantro, sour cream, tortilla strips, avocado

Instructions

  1. Sauté chopped onion in olive oil over medium heat until softened, about 5–7 minutes.
  2. Add minced garlic and stir in broth, diced tomatoes, drained black beans, green chilies, red bell pepper, and spices.
  3. Bring the mixture to a boil; then reduce heat and simmer uncovered for 8–10 minutes.
  4. Blend the soup to your desired consistency using an immersion blender or regular blender.
  5. Stir in lime juice and season with salt and pepper to taste.
