  • 1 cup uncooked rice
  • 2 cups chicken broth
  • 1 cup frozen peas (optional)

Instructions

  1. Rinse the rice under cold water until clear and cook it according to package instructions using chicken broth instead of water. Set aside.
  2. In a large skillet over medium heat, heat olive oil and sauté the diced onion for 2-3 minutes until translucent. Add minced garlic and cook for another minute.
  3. Season chicken breasts with paprika, salt, black pepper, and thyme; cook in the skillet for 5-6 minutes on each side until golden brown and cooked through (165°F internal temperature).
  4. Remove chicken from the skillet. Lower heat and add heavy cream to combine with remaining ingredients; bring to a simmer.
