  • 4 strips bacon
  • 1/2 medium onion (chopped)
  • 3 sticks celery (chopped)
  • 2 medium carrots (peeled & chopped)
  • 2 cloves garlic (minced)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 4 cups corn (fresh or frozen)
  • 2 large Russet potatoes (peeled & diced)
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium-high heat, cook the bacon until crispy (about 10 minutes). Remove bacon and leave about 2 tablespoons of fat in the pot.
  2. Add onion, celery, and carrots to the pot; sauté for about 5 minutes until softened.
  3. Stir in minced garlic; cook for another 30 seconds before adding flour to make a roux.
  4. Gradually pour in chicken broth while stirring; scrape brown bits from the pot as you mix.
  5. Add heavy cream, corn, diced potatoes, Italian seasoning, cayenne pepper (if using), and most of the bacon. Bring to a boil then reduce heat to simmer for 15-20 minutes until potatoes are tender.
  6. Season with salt and pepper to taste before serving hot with reserved bacon on top.
