  • 2 1/3 cups almond flour
  • 1/3 cup coconut flour
  • 1/2 tsp baking soda
  • 2 eggs
  • 1/2 tbsp orange zest
  • 1 tsp vanilla extract
  • 1/2 cup orange juice
  • 1/4 cup honey
  • 2 tbsp melted coconut oil
  • 1 cup cranberries
  • 1/2 cup chopped pecans

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tray with liners.
  2. In a mixing bowl, combine eggs, vanilla extract, melted coconut oil, honey, orange juice, and orange zest. Add baking soda on top of the orange juice.
  3. Gradually mix in almond flour and coconut flour until just combined.
  4. Gently fold in cranberries and chopped pecans.
  5. Fill muffin cups to the top with batter and optionally add extra cranberries for decoration.
  6. Bake for about 25 minutes or until a toothpick comes out clean. Cool completely before serving.
