  • 2 lbs ground beef (80-85% lean)
  • 1 medium onion (finely chopped)
  • 2 large eggs
  • 3/4 cup milk
  • 3/4 cup breadcrumbs (preferably Panko)
  • 3 cloves garlic (minced)
  • 1/4 cup ketchup
  • 2 tbsp fresh parsley (finely chopped)
  • 1 tsp Worcestershire sauce
  • 1 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp Italian seasoning
  • 1/2 cup ketchup (for glaze)
  • 2 tbsp brown sugar (for glaze)
  • 1 tsp white vinegar (for glaze)
  • 1/2 tsp garlic powder (for glaze)
  • 1/4 tsp onion powder (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a loaf pan.
  2. In a large mixing bowl, combine ground beef, onion, eggs, milk, breadcrumbs, garlic, ketchup, parsley, Worcestershire sauce, salt, pepper, and Italian seasoning. Mix until just combined.
  3. Shape the mixture into a loaf and place it in the prepared pan.
  4. For the glaze: mix ketchup with brown sugar and vinegar; brush half over the meatloaf.
  5. Bake for 45 minutes; brush with remaining glaze and continue baking until internal temperature reaches 160°F (71°C), about another 15–30 minutes.
  6. Let rest for 10–15 minutes before slicing.
