  • 3 large carrots (peeled and chopped)
  • 2 ribs celery (chopped)
  • ½ medium onion (diced)
  • 2 teaspoons Italian seasoning
  • 6 cups low sodium chicken broth
  • 2 uncooked boneless, skinless chicken breasts
  • 2 ½ cups fresh or frozen cheese tortellini
  • 1 cup fresh chopped spinach

Instructions

  1. Heat oil in a large Dutch oven over medium-high heat until shimmering.
  2. Sauté carrots, celery, and onion for about 4-5 minutes until softened.
  3. Stir in Italian seasoning, salt, garlic, and black pepper; cook for another minute.
  4. Add chicken broth and chicken breasts; bring to a simmer. Reduce heat to medium-low and cover for 10-14 minutes until chicken is cooked through.
  5. Remove chicken, shred it, then return to the pot along with tortellini and spinach.
  6. Stir well and serve hot.
