  • 1 cup dark brown sugar
  • 1/3 cup white sugar
  • 1 egg + 1 egg yolk
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 1 3/4 cups all-purpose flour
  • 1/4 cup espresso powder
  • 1/2 teaspoon baking soda
  • 4 ounces dark chocolate (chopped)

Instructions

  1. Brown the butter over medium heat until golden and nutty; let cool.
  2. In a mixing bowl, combine cooled butter, dark brown sugar, and white sugar. Beat in the egg, egg yolk, and vanilla.
  3. In another bowl, whisk together flour, espresso powder, salt, and baking soda. Gradually mix into wet ingredients.
  4. Fold in dark chocolate chunks gently.
  5. Chill the dough in the refrigerator for at least 30 minutes.
  6. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. Scoop dough onto the sheet spaced two inches apart; bake for about 11 minutes until edges are golden but centers remain gooey.
  8. Cool on the baking sheet before transferring to a wire rack.
