  • 12 oz rotini pasta
  • 2 cups cooked diced boneless skinless chicken breast
  • 1/2 cup buffalo sauce
  • 1 cup sharp cheddar cheese, shredded
  • 4 oz cream cheese
  • 2 tbsp butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1 cup panko breadcrumbs (for topping)
  • 2 green onions, sliced (for garnish)

Instructions

  1. Boil salted water in a large pot and cook the rotini pasta according to package instructions until al dente. Drain and set aside.
  2. In a skillet over medium heat, sauté the diced chicken seasoned with salt and pepper for about 5–7 minutes until golden brown.
  3. In a saucepan, melt butter over medium heat. Stir in flour to create a roux, then gradually whisk in milk until smooth. Add cream cheese until melted, followed by shredded cheddar cheese and buffalo sauce until creamy.
  4. In a large mixing bowl, combine cooked pasta with the cheese sauce and sautéed chicken; mix well.
  5. Transfer to a greased baking dish and top with panko breadcrumbs for extra crunch.
  6. Preheat oven to 350°F (175°C) and bake for about 20–25 minutes or until bubbly and golden.
