  • 1 lb sausage (browned)
  • 2 cups shredded cheddar cheese
  • 8 flour tortillas (8-inch)
  • 6 eggs
  • 2 cups half-and-half
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon salt
  • 3 oz package Real Bacon Bits

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Spray a 13×9 inch baking pan with cooking spray.
  3. In a large bowl, combine browned sausage, 1 cup of cheese, and half of the bacon bits.
  4. Fill each tortilla with about an eighth of the filling mixture, roll tightly, and place seam side down in the prepared pan.
  5. In another bowl, whisk eggs, half-and-half, flour, and salt until smooth. Pour evenly over the rolled tortillas.
  6. Cover and refrigerate overnight or bake immediately.
  7. When ready to bake, uncover the dish and sprinkle remaining cheese and bacon bits on top. Cover with foil and bake for 35 minutes; then uncover and bake an additional 10 minutes until golden.
