  • 1 small red bell pepper
  • 1 medium zucchini
  • 6 green onions
  • 2 cups enchilada sauce
  • 1 can black beans
  • 1 cup frozen corn
  • 8 corn tortillas
  • 1.5 cups shredded cheese

Instructions

  1. Preheat oven to 425°F.
  2. In an oven-safe skillet over medium-high heat, spray with cooking spray and add olive oil. Cook ground beef, bell pepper, zucchini, and the light parts of green onions until the beef is browned (about 8 minutes).
