  • 2 teaspoons apple pie spice or pumpkin spice
  • 1 large egg (room temperature)
  • 1¼ cup light brown sugar
  • ¾ cup granulated sugar
  • 1 teaspoon baking powder
  • Ground cinnamon (for topping)

Instructions

  1. Reduce the apple cider in a saucepan over medium heat until it reaches about ¼ cup; let cool.
  2. Brown the unsalted butter on low heat until lightly golden and fragrant; cool for about 15 minutes.
  3. In a mixing bowl, whisk together the all-purpose flour, baking powder, and apple pie or pumpkin spice.
  4. In another bowl, mix the browned butter with light brown sugar and granulated sugar, then add the egg, reduced apple cider, and optional vanilla extract.
  5. Gradually incorporate the dry ingredients into the wet mixture until just combined; avoid overmixing.
  6. Use a cookie scoop to drop dough onto a lined baking sheet, spacing them two inches apart.
  7. Bake at 375°F for about 9–11 minutes until edges are set but centers remain soft.
  8. Cool slightly before rolling in ground cinnamon sugar and drizzling with icing if desired.
